Grand Wayne Convention Center
The Project
The dishroom at Grand Wayne Convention Center had fallen behind the operation it supported. Equipment and worktables competed for limited floor space, creating a congested workflow, extra handling of wares, and areas that were hard to reach for proper cleaning and sanitation. The space also looked dated and no longer reflected the standards of a modern foodservice operation.
With HRI serving as design consultant, the dishroom was completely redesigned around an open-concept layout built for efficiency, sanitation, and ease of operation. New Hobart and Aerowerks equipment brings energy, water, and labor-saving features to the heart of the operation.
Project Goals:
– Open up a cluttered, congested floor plan.
– Create clear work and traffic paths for staff.
– Improve the flow of soiled and clean wares and cut down on unnecessary handling.
– Eliminate hard-to-reach areas to support proper cleaning and sanitation.
– Reduce operating costs with energy, water, and labor-saving equipment.
