Reid Hospital
Dishroom Remodel
The Project
To modernize foodservice operations at Reid Hospital, a comprehensive dishroom remodel was carried out. The project refreshed antiquated ware-washing and dish-handling infrastructure — replacing old equipment, reorganizing workflow, and creating a streamlined, hygienic, and efficient dishroom area aligned with present-day healthcare foodservice standards.
Project Goals
The main objective of upgrading the dishwashing system at Reid Hospital was to create a cohesive, integrated system rather than a set of disjointed components. The goal was to ensure that the new Aerowerks accumulator and Hobart pulper worked in harmony, not only with each other but also with the existing kitchen infrastructure. This integrated approach aimed to enhance operational efficiency, reduce waste more effectively, and improve the overall workflow in the kitchen, thus supporting both environmental and operational objectives.
Project Successes
The Results
-
Improved hygiene & compliance with sanitary standards — The new dishroom setup ensures consistent washing and sanitization of dishware and trays, supporting food-safety protocols that meet hospital requirements.
-
Enhanced workflow & staff efficiency — Redesigned layout and updated equipment reduced bottlenecks in dishroom operations, making it easier for staff to manage soiled and clean ware-handling.
-
Reduced labor and faster turnaround — The upgrade lowered the labor required for washroom tasks and sped up washing and drying cycles, enabling faster turnover of dishes and trays.
-
Better scalability & support for meal service volume — The remodeled dishroom can handle fluctuating meal loads — from routine patient meals to peak cafeteria or service times — without compromising efficiency or cleanliness.
